Ingredients

Serves 4-6 people

This recipe traditionally calls for crab, but it's equally delicious as a vegetarian option. And don’t worry if you make too much—this fried rice makes for fantastic leftovers! If possible, swap supermarket-bought herbs for freshly grown ones; it makes a world of difference.

The Essentials

  • 1/2 cup loosely packed Thai Basil leaves
  • 1 tbsp fresh cilantro (for garnish)

Everything Else

  • 3 tbsp vegetable oil
  • 2 tsp garlic (chopped)
  • 2 eggs (well-beaten)
  • 4 cups cooked Jasmine rice
  • 1/2 lb crab meat (optional for vegetarians)
  • 2 tsp red curry paste
  • 1 tbsp fish sauce (or soy sauce for vegetarian)
  • 1 tbsp soy sauce
  • 3 tbsp scallions (thinly sliced)
  • 1 tsp lime juice
  • 1/4 cup cooked green peas
  • 1 tsp black pepper
  • Pinch of salt

Fresh Thai Basil

Method

  1. Heat a large wok or pan with the vegetable oil over medium-high heat.
  2. Add the beaten eggs, sprinkle with a pinch of salt, and stir-fry. Set aside as soon as the eggs are slightly undercooked.
  3. In the same pan, stir-fry the garlic, curry paste, crab meat (optional), and cooked rice for 2-3 minutes.
  4. Add soy sauce, fish sauce (or additional soy sauce for vegetarian), peas, and lime juice. Reduce the heat to medium and continue cooking for another 2-3 minutes.
  5. Return the eggs to the pan, along with the Thai Basil and scallions. Stir well to combine.
  6. Serve immediately, garnished with fresh cilantro.
