Thai Basil Fried Rice Recipe

Ingredients

Serves 4-6 people

This recipe calls for crab, but is also delicious without it if you prefer to go vegetarian. Don’t stress if you make too much, it also makes for killer leftovers 😉 If you can pull it off (and we know you can!), you won’t regret substituting supermarket-bought herbs for freshly grown ones. First the important stuff

  • 1/2 cup loosely packed Thai Basil leaves
  • 1 tbsp. fresh Cilantro

Then everything else 😉

  • 3 tbsp. Vegetable oil
  • 2 tsp. Garlic (chopped)
  • 2 Eggs (well beaten)
  • 4 cups Rice (Jasmine), cooked
  • 1/2 lb. Crab meat
  • 2 tsp. Curry paste (red)
  • 1 tbsp. Fish sauce
  • 1 tbsp. Soy sauce
  • 3 tbsp. Scallion (thinly sliced)
  • 1 tsp. Lime juice
  • 1/4 cup Peas (green, cooked)
  • 1 tsp. Pepper (black, ground)
  • Pinch of salt

Method

  1. Heat a large wok or pan with the vegetable oil
  2. Stir fry the egg, adding a pinch of salt
  3. Remove egg and set aside to cool as soon as it’s done (best to slightly under cook it here, rather than go the other way)
  4. Stir fry the garlic, curry paste, crab meat and rice for 2-3 minutes
  5. Add soy sauce, fish sauce, peas and lime juice. Reduce heat to medium and continue for another 2-3 minutes
  6. Add the egg back, along with the Thai Basil and scallion
  7. Serve, and garnish with cilantro
